The one thing I do miss since becoming gluten and dairy free is a tasty donut! Even if you find a vegan donut, it’s most likely not gluten free…Soooo I’ve been testing out my own at home and wow! These blueberry donuts hit the mark, so maybe make a double batch!!

You don’t necessarily need the icing, but come on, who doesn’t love icing? If I’m being honest, I’m one of “ those” people who licks the spatula, beaters and bowl to get the last of the icing. I can’t help myself!

Now I did list this recipe under “Breakfast” because technically it’s healthy enough for breakfast. It is made with oats after all! But if you want to make it a balanced breakfast, pair it with some protein. Maybe  eggs, breakfast sausage, bacon or even a dairy free yogurt.

I love Siggi’s plant based yogurts, they have 8-10 grams of pea protein. Another great option for a dairy free yogurt is Culina yogurt. Culina is a coconut based yogurt made with very few, clean ingredients.

So there you have it, a donut that’s really easy to make. It’s gluten and dairy free. Plus it tastes incredible! What more could you ask for?

Gluten and Dairy Free Blueberry Baked Donuts

Ingredients

Donuts
  • 1 cup 1:1 gluten free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 teaspoon lemon zest
  • 3 Tablespoons vegan butter, melted
  • 1/4 cup plus 1 tablespoon plant milk (I used oat milk)
  • 1 Tablespoon lemon juice
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries, washed
Icing
  • 1/2 cup powdered sugar
  • 1 Tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon plant milk
  • Lemon zest for sprinkling

Instructions

  1. Preheat your oven to 375 degrees F.
  2. In a large mixing bowl, combine all of your dry ingredients (except blueberries). Whisk well and set aside.
  3. In a medium bowl, whisk all of your wet ingredients together. Slowly, combine your wet ingredients into your dry. Mix until no lumps. Carefully fold in your blueberries.
  4. Spray your donut pan lightly with cooking spray. (I like using avocado oil.) Fill each donut hole with the mixture. This recipe makes 6 donuts.
  5. Cook for 10-12 minutes, or until you can insert a toothpick with it coming out clean.
  6. Let the donuts cool completely before icing them.
  7. To make the icing, simply combine all your ingredients and whisk until no lumps are present.
  8. Drizzle the icing over each donut and top with some more lemon zest!
