This recipe can’t decide if it’s an appetizer, a side or the main entree…That’s when you know it’s good!

Your guests won’t be able to stop talking about the crunch or the flavors and they definitely WON’T be able to stop eating it!

If you are dairy free, you’re going to love how creamy the dressing tastes. I really believe it’s the combination of the olive oil, nutritional yeast and walnuts that give this salad its creamy consistency.

If you plan on serving this as an appetizer and you’re looking for an alternative tortilla chip, that is grain free, you need to try the brand Siete. My favorite flavors are “Sea Salt” and “Lime”. They both pair beautifully with this dish, so pick up both!

If you decide to serve this as a part of your main meal, I suggest air frying or grilling  some chicken. You can’t go wrong with topping this salad with either one.

Ingredients

  • 1 bag of pre cut cabbage (I chopped it into even smaller pieces)
  • 2 shoots of green onion, chopped
  • 1 English cucumber, finely chopped
  • 1 cup of fresh basil & dill
  • 1 cup spinach
  • 2 garlic cloves, peeled
  • 1/3 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/4 cup walnuts
  • Juice of 1 lime
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sea salt

Instructions

  1. Combine the chopped cabbage, green onions and cucumbers in a large mixing bowl. Toss to combine.
  2. Add the herbs, spinach, garlic, nutritional yeast, olive oil, walnuts, rice wine vinegar, lime & sea salt in a food processor or high powered blender. Blend until smooth and mixture is combined. Add the dressing to the chopped cabbage. Combine thoroughly.⁣⁣
  3. Serve as a dip with tortilla chips. As a meal with grilled chicken or by itself as a side salad.
