Summer is here and it has me craving fruit salad like crazy! The different colors, the sweet, the sour, I love it all! Your taste buds are going to love this honey,  lime and mint dressing too. It really adds something special that the average fruit salad doesn’t.

Also, don’t stress out while making this either. There’s no right or wrong way to create this dish. It changes every time I make it too because the selection of fruit is so awesome during the summer! Melons are fun to add. I have found so many varieties lately…I don’t even know what half of them are!

So just get creative and try that weird fruit you walk past all the time at the grocery store. You never know, it might just surprise you and become your new favorite!

While you’re at it, pick up that mint plant in the herb section. That’s something I did and now I have my own little herb garden right in my backyard! They don’t take up a lot of room and now I get to cook with fresh herbs anytime I like.

Ingredients

  • 1/4 cup honey⁣⁣⁣
  • Juice of 1 lime⁣⁣⁣
  • Zest of 1 lime⁣⁣⁣
  • Chopped mint⁣⁣

Instructions

  1. Add your favorite fresh fruits into a serving bowl, then set aside. Now combine the honey, lime juice & lime zest into a sealable jar. Stir until completely combined (not sticky anymore). ⁣⁣Then seal up the jar and give it a good shake.
  2. ⁣Drizzle the dressing all over the salad. Sprinkle chopped mint and then give the fruit a toss!
