Step 1: In a large saucepan, cook the orzo according to package directions. Drain and rinse under cold water and set aside to cool.

Step 2: In a jar with a tight fitting lid, combine the mustard, lime zest, lime juice, olive oil, Italian seasoning, salt, pepper, and red pepper flakes.  Cover tightly and shake vigorously to combine. Set aside.

Step 3: In a large bowl, combine the tuna, celery, cucumber, radishes, olives, and parsley. Using a fork, mix well.

Step 5:  Add the orzo and feta, stir to combine.

Step 6: Add the remaining vinaigrette and stir well.

Ingredients

Zesty Dijon Dressing
  • 2 ½ teaspoons Dijon mustard
  • Zest of 1 lime
  • 1 ½ limes, juice of
  • ⅓ cup extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • sea salt and black pepper, to taste
  • ½ teaspoon crushed red pepper flakes, optional
Tuna Salad
  • 3 cans tuna in water, drained
  • 3 small celery stalks, chopped
  • ½ cucumber, chopped and seeds removed
  • 1 large or 2 small radishes, stems removed, chopped
  • ½ cup cup pitted Kalamata olives, halved
  • 1 cup chopped fresh parsley, chopped
Other Ingredients
  • 1 box gluten free orzo (I use Jovial)
  • Chopped greens
  • Dairy free feta

Instructions

  1. Cook gluten free orzo according to package directions. Drain and rinse. Then set aside to cool.
  2. Dressing - Combine all ingredients into a small mason jar. Screw the lid on and shake well. Set aside.
  3. Tuna - in a large bowl, combine the tuna fish, chopped veggies, Kalamata olives and chopped parsley. Mix everything together with a fork.
  4. Then pour half the dressing over the tuna mixture. Mix well, add in the gluten free orzo along with the dairy free feta.
  5. Combine well and then pour remaining dressing. Mix again and scoop over a bed of greens.
