Watermelon Basil Popsicles
What fruit screams summer? Watermelon of course!
I remember being a kid, playing on the “Slip n Slide” and my aunt bringing out a giant bowl full of watermelon for me and my cousins to devour! Ah…summer memories are coming in hot today (Lol)!!!
But I digress, let’s get back to the popsicles. These watermelon delights were given a sophisticated upgrade, with just a hint of basil and a squeeze of lime.
Making basil infused water is easy. It also gives you another way to utilize that basil plant you bought for your herb garden this summer!
Basil might sound like a strange addition but don’t worry, it's super subtle. The kids will still enjoy them and so will your adult palette!

Watermelon Basil Popsicles
Ingredients
- 1 cup fresh basil leaves
- 3/4 cup boiling water
- 3 cups watermelon, seeds removed
- 2 Tablespoons fresh lime juice
Instructions
- Place basil leaves in a bowl of boiling water. Press basil with a muddler or spoon to infuse the flavor. Cover bowl and allow water to completely cool (about 10 minutes).
- Once cooled, remove the basil leaves and pour infused basil water into a blender. Add the watermelon and lime juice. Blend until smooth.
- Pour into popsicle molds and freeze completely (5 hours- overnight).
