Summer is the perfect time for a gorgeous strawberry salad! Strawberries are in season and can be found at pretty much  every farmers market or grocery store.

The combo of sweet (from the strawberries) and salty (from the bacon) make this salad desirable for all taste buds! Now add cucumbers and pistachios for a little more crunch. A feta cheese for some kick! If you’re dairy free like me, don’t worry I got you covered. “Follow Your Heart” has a dairy free version of feta cheese that literally tastes like the real thing, no joke!

If you aren’t a feta fan, add any cheese you like.

Ok, now let’s talk about this incredible vinaigrette dressing…Mmm, my mouth is watering just typing this! The honey and balsamic work so well together. While the olive oil gives it a rich flavor. But make sure to get a good olive oil (and no, I don’t mean expensive). Just look for “first cold pressed, extra virgin olive oil”. I like the brands “Lucina or Colavita” the best.

The key to olive oil is the taste, duh! But the best way to know if your olive oil will make or break your dressing, is how does it taste by itself?

Splash a dot on your finger for a taste test. If it tastes rancid (get rid of that one)  or not very flavorful, it’s a NO for the dressing!

Adding this delicious vinaigrette to your strawberry bacon salad is gonna take it to the next level, I promise!

Ingredients

  • 8 ounces chopped lettuce (I like using a spring mix)
  • 16 ounces strawberries, sliced
  • 12 ounces bacon, cooked and chopped
  • 1 cup cucumbers, diced
  • 1 cup dairy free feta
  • 1 cup raw pistachios
Honey Balsamic Vinaigrette
  • ¼ cup extra virgin olive oil
  • 2 Tablespoons balsamic vinegar (I use an aged cherry balsamic)
  • 2 Tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon dijon mustard
  • ¼ - ⅓ cup water (depending on how thick/thin you like your dressing)
  • sea salt & fresh ground black pepper, to taste

Instructions

Vinaigrette
  1. Prepare the vinaigrette first by whisking all of the dressing ingredients together. The olive oil and water can be adjusted based on how thick or thin you prefer your salad dressings. Be sure to taste the dressing & season as needed with salt and pepper.
  2. Set dressing aside or store in the refrigerator until ready to plate salad. Applying dressing before eating isn’t advised as the lettuce will become wilted.
  3. Dressing can be made ahead and stored in the refrigerator for up to 7 days in a sealed tight container.
Salad
  1. Cook bacon according to package directions. Then let the bacon cool, chop and set aside.
  2. In a large bowl, add lettuce, then arrange the strawberries, bacon, cucumbers, dairy free feta and pistachios to your liking.
  3. Reserve the honey balsamic vinaigrette until ready to serve the salad.
