Gluten Free Monster Cookie Bars

 
 

Sometimes cookies are just a pain to make, ya know? Like, I’m craving them but I don’t want to spend the time scooping them individually onto a baking sheet. Waiting for them to cook, placing them each on the cooling rack. Only to have to bake another batch!

My answer to this is make your cookies into bars. It’s such a time saver and turns your cookies into a thick chewy brownie!

Not exactly sure where the name “Monster” came from but I’m sure it has to do with the monster amount of mix ins that are added! You can really add in any kind of chocolate chip, candies, nuts or seeds you like. But for me the “UNREAL Dark Chocolate Quinoa Gems” are a cleaner ingredient alternative and I appreciate that.

These cookie bars are also great to make because they can be wrapped individually and stored in the freezer. Believe me, if you don’t hide them for later, they will be gone in one day!

Ingredients

  • 2/3 cup unsweetened tahini⁣
  • 1/3 cup coconut sugar⁣
  • 1/4 cup maple syrup⁣
  • 1/3 cup coconut oil⁣
  • 1/2 tsp salt⁣
  • 2 tsp vanilla extract⁣
  • 1 1/3 cup rolled oats⁣
  • 1/2 cup cassava flour⁣
Toppings
  • 1/2 cup dairy free chocolate chips⁣
  • 1 package (5 oz.) UNREAL Dark Chocolate Quinoa Gems⁣
  • 1/3 cup shredded coconut⁣
  • 1/3 cup chopped hazelnuts ⁣

Instructions

  1. Preheat the oven to 350F and line an 8x8 pan with parchment paper.⁣
  2. ⁣In a small saucepan, heat tahini, coconut sugar, maple syrup, coconut oil, and salt over low- medium heat. Continue stirring for 3-5 minutes, or until mixture starts to thicken.⁣ Remove from heat and stir in vanilla extract until combined. Set aside.⁣
  3. ⁣In a separate bowl combine rolled oats and cassava flour. Then add the wet mixture to the bowl. Stirring well until mixture resembles thick brownie like batter. Now add in all the fun mix ins, (leaving some chocolate chips & UNREAL Gems aside for the topping.)⁣
  4. ⁣Using your hands or a spatula, press the mixture evenly into the baking pan. Sprinkle some extra chocolate chips, along with some more UNREAL Dark Chocolate Quinoa Gems.⁣
  5. ⁣Bake for 22 minutes in a 350 degree oven.⁣
  6. When done, cool completely before slicing.
