This granola recipe  was inspired by my all time favorite store bought version. But since being gluten free, I make my own. The combination of chocolate and strawberries together is simply heaven!

You can eat it right out the jar,  one chunky piece at a time. Use it as a topper for yogurt or get yourself a generous size bowl and pour some milk over it.  There’s no wrong way to enjoy this scrumptious granola!

Here’s one little tip I’ll pass along though…The key to those nice big pieces, is allowing the sheet of granola to cool completely. It’s tempting, but breaking it while warm will give you small little crumbles!

Ingredients

  • 3 cups gluten free rolled oats⁣
  • 1/2 cup unsweetened flaked or shredded coconut⁣
  • 1/2 cup honey⁣
  • 3 Tablespoon unrefined coconut oil⁣
  • 2 teaspoon pure vanilla extract⁣
  • 3 Tablespoon unsweetened cocoa powder⁣
  • 1/2 teaspoon cinnamon⁣
  • 1/2 cup chocolate chips (I use dairy free)⁣
  • 3/4 cup freeze-dried strawberries⁣

Instructions

  1. Preheat the oven to 300 degrees F.⁣ Line a baking sheet with parchment paper.⁣
  2. ⁣In a large bowl, mix together the oats and coconut.⁣
  3. ⁣On the stove with low heat, combine honey and coconut oil. When both have melted together add vanilla, cocoa powder and cinnamon.⁣
  4. ⁣Pour the warm honey mixture onto the dry ingredients and stir very well until thoroughly coated.⁣
  5. Scoop oat mixture onto the parchment paper. Spread it as evenly as possible, but not to thin (it will burn). Bake for 18-22 minutes. Every oven is different and temperatures can fluctuate. If it’s turning dark, it’s going to be a little over done. So watch carefully.⁣
  6. ⁣Cool granola completely before breaking apart and adding your mix-ins. Crush some of the freeze dried strawberries (but not all). Stir in the chocolate chips as well as the whole and crushed freeze-dried berries.⁣
  7. ⁣Store granola in an airtight container for up to a week. Serve on top of your favorite yogurt, ice cream or feel free to just eat it by the handful.
