The great thing about making fresh homemade salad dressing, is that it typically only takes a few minutes.  Plus they taste so much better!!!

This avocado dressing is a great creamy dressing if that’s what you're craving. Plus avocados provide us with a concentrated source of healthy fats and fiber!

Ingredients

  • 1 ripe avocado
  • 1 lemon, juiced (about 3 Tablespoons)
  • 3/4 cup water
  • 2 Tablespoons olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a blender or food processor, combine all ingredients. Blend on low until smooth and creamy. (You can add more water depending on how thin you like your salad dressing.)
  2. Drizzle on salad if serving immediately. If salad will be served at a later time, store dressing in an airtight container in the refrigerator for up to 3 days.
