Step 2: Using a fork, poke several holes into each sweet potato. Place sweet potatoes on the lined baking sheet.

Step 4: Remove the sweet potatoes from the oven and allow them to cool until you can handle them.

Ingredients
- 5 medium to large sweet potatoes, baked or steamed
- 3/4 cup full-fat coconut milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- Vegan Marshmallows, as many as your heart desires (I use Dandies)
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Poke holes into sweet potatoes with a fork, to allow the steam to escape. (This helps the potatoes not to randomly burst in your oven!)
- Bake sweet potatoes for 45 minutes or until you can insert a knife easily into the skin and through the potato.
- When fully cooked, let the potatoes cool enough so you can handle them. Slicing them in half speeds up the cooling time.
- Lower the oven temperature to 350°F.
- Then scoop out all the filling and add them to a large mixing bowl. (leaving the skins aside)
- With an electric mixer, start mixing the sweet potatoes. Then add the coconut milk, maple syrup, vanilla, cinnamon, cardamom, nutmeg and sea salt. Continue mixing until everything is well blended and creamy. Taste and adjust any seasonings.
- Transfer the sweet potato mixture to a baking dish and smooth the top with a spatula. Add on your vegan marshmallows.
- Bake for 20 minutes, or until the marshmallows are slightly melted. Additionally, you can broil for 2-3 minutes more if you like your marshmallows a little crispy. Watch them closely, as they can burn quickly!
