Ingredients

Here are notes about the ingredients needed to make this bean soup.  All of these ingredients can be found at your local grocery store or an online retailer.

  • Avocado oil

  • Protein: You can use ground beef, ground turkey or ground chicken.  Choose your favorite!

  • Onion: Use chopped yellow onion.

  • Carrots

  • Celery

  • Garlic: Use fresh garlic cloves or pre-minced from a jar.

  • Broth:  Use beef broth, chicken broth or vegetable broth.

  • Beans:  You will need one can each of cannellini beans and red kidney beans.

  • Tomatoes:  One can of Italian diced tomatoes is going to give you the best flavor.

  • Tomato sauce:  Use one 15-ounce can of tomato sauce.

  • Salt & black pepper

  • Herbs: You will season the soup with dried bay leaves, rosemary and thyme.  Use fresh parsley as a garnish.

  • Pasta: I prefer Jovial Gluten Free Pasta.

Step-By-Step Instructions

Here is how to make this traditional Italian soup recipe.

Step 1: In a large pot, heat the avocado oil over medium-high heat.  Add the ground protein of choice and cook until no longer pin, about 4-5 minutes.  Use a wooden spoon to break up the meat as it cooks.

Step 2: Add the garlic, onion, carrot, celery thyme, rosemary, and parsley.  Cook for about 6 minutes, stirring frequently.

Step 3: Add the broth, beans, tomatoes, tomato sauce, salt, pepper, and bay leaves.  Increase the heat to high and bring to a boil, then reduce heat and simmer for 5 minutes over medium heat.  

Step 4: Add the uncooked pasta and continue to cook for 10 more minutes or until pasta is al dente.

Step 5:  Remove the bay leaves and discard.

Step 6: Season with additional salt and pepper if needed.  Ladle into bowls, top with dairy free cheese and crushed red pepper flakes, if desired.

Expert Tips

  • I’ve tried lots of gluten free pasta over the years and the one brand that doesn’t end up gummy or pasty is Jovial Gluten Free Pasta.

  • Top the soup with your favorite dairy free cheese, if desired.

  • Don’t forget to remove the bay leaves before serving the soup!

  • Be sure to use a large stock pot or dutch oven.  This makes quite a bit and you will run out of space and have a mess if you don’t plan accordingly!

  • Add more broth if the soup seems too thick.

Variations

  • You can use whatever veggies you like! I’ve added zucchini and yellow squash as well.

  • You can use any pasta small pasta shape you prefer.  Some good pasta shapes would be small shells, penne or elbow macaroni. 

  • Use olive oil instead of avocado oil.

  • Cook the pasta on the side and add it to individual bowls of soup to prevent the pasta from soaking up all the liquid.

  • If you are unable to find cannellini beans, use other white beans like great northern beans or navy beans.

  • Try ground Italian sausage for extra flavor.

Serving Suggestions

Serve this delicious soup  with a nice loaf of gluten free bread or gluten free breadsticks for dipping.  It would also pair well with a fresh green salad.

No.  This soup can be made with regular pasta containing gluten.  Feel free to use, whichever pasta you prefer.

Can I make this vegetarian?

Yes.  Skip the protein and make the rest of the recipe as is.  

What can I do with leftovers?

Store completely cooled leftovers in an airtight container in the refrigerator for up to 5 days.  Reheat on the stove or in the microwave until heated through.

  • 1 Tablespoon avocado oil⁣
  • 1 lb ground beef, turkey, chicken or protein of choice.⁣
  • 1/2 yellow onion, diced⁣
  • 3 medium carrots, diced⁣
  • 2 medium celery ribs, diced⁣
  • 2 cloves garlic, minced⁣
  • 5 cups beef, chicken or veggie broth⁣
  • 14.5 oz canned cannellini beans, rinsed and drained⁣
  • 14.5 oz canned red kidney beans rinsed and drained⁣
  • 15 oz canned Italian diced tomatoes, with their juices⁣
  • 15 oz tomato sauce⁣
  • 1 teaspoon salt⁣
  • 1 teaspoon ground black pepper⁣
  • 2 bay leaves⁣
  • 1 Tablespoon dried rosemary⁣
  • 1 Tablespoon dried thyme⁣
  • 1 box gluten free pasta (I prefer @jovial )⁣
  • 3 tablespoons fresh or dried Italian parsley, chopped⁣
  • Sprinkle of crushed red pepper (optional)⁣

Instructions

  1. Heat 1 Tablespoon of avocado in a large pot over medium-high heat. Add the ground protein of choice and cook for 4-5 minutes, breaking up the protein as it cooks.⁣
  2. ⁣Add garlic, onion, carrot, celery, thyme, rosemary, and parsley then cook, stirring frequently for about 6 minutes.⁣
  3. ⁣Stir and cook 1 more minute.⁣
  4. ⁣Add the broth, beans, diced Italian tomatoes, tomato sauce, salt, pepper, and bay leaves. ⁣
  5. ⁣Increase the heat to high and bring to a boil. Let simmer for 5 minutes. Veggies should be soft.⁣
  6. ⁣Next, stir in the gluten free pasta. Cook for about 10 minutes or until pasta is al dente.⁣
  7. ⁣Remove the bay leaves from the soup. If the soup seems too thick, add more broth to desired consistency.⁣
