These tahini cookies are my new favorite! They are gluten free, dairy free, nut free, slightly caramel tasting and perfectly chewy for making ice cream sandwiches with.

Tahini Chocolate Chip Cookie Dough

What is tahini you ask? Well, tahini is ground sesame butter or paste that’s traditionally used in Middle Eastern cuisine.

It’s nut free, so it’s a great alternative for those recipes that call for different nut butters. It’s also becoming pretty  popular for bakers too. Like in cookies, cakes and quick breads...Oh, we can’t forget stir fry and salad dressings!

As far as nutrition goes, tahini is a great source of healthy fat as well as vitamin B. Yup, I’m that girl. Sneak in ALL the healthy stuff into a cookie recipe!

Ingredients

  • 2 flax eggs (2 tablespoons ground flax plus 6 Tablespoons water)⁣
  • 1 cup tahini⁣
  • 1/2 cup coconut oil, melted
  • 2 Tablespoons dairy free milk⁣
  • 1 cup coconut sugar⁣
  • 2 teaspoons vanilla extract⁣
  • 1 cup cassava flour⁣
  • 1 teaspoon baking soda⁣
  • 1/2 teaspoon sea salt⁣
  • 1 cup dairy free chocolate chips⁣
  • dairy free ice cream⁣

Instructions

  1. In a large mixing bowl combine your wet ingredients of tahini, coconut oil, flax egg, coconut sugar, dairy free milk, and vanilla extract. Mix well.
  2. ⁣In a separate bowl stir together your dry ingredients. Cassava flour, baking soda, and sea salt. Then combine the wet and dry ingredients together.
  3. ⁣Fold in dairy free chocolate chips. Cover and chill dough for 30 minutes. While dough is chilling, preheat oven to 350 degrees.⁣
  4. ⁣After chilling, line a baking sheet with parchment paper. Scoop out 2 Tablespoons of cookie dough, 3 cookies per row.⁣ ⁣Bake for 9-11 minutes (this will vary oven to oven. 9 minutes was the perfect time for mine!)
  5. Let cookies cool completely. Then, take your favorite, slightly melted, dairy free ice cream and place a scoop between two cookies. Smoosh together & enjoy!
