Mini Dairy and Gluten Free Strawberry Pie
When summer rolls around the last thing we want to be doing is spending a lot of time in the kitchen. That’s why you’re going to love this easy peasy strawberry pie recipe!
These are individual “pies” and I say pies, but the crust is literally just smashed up graham crackers. So even the kids can make this dessert!
You can make one of these or six, that’s my favorite part of these cuties! My other favorite part of this recipe is that there are no concrete measurements. Just measure from the heart. Don’t like cinnamon? Don’t add it. Like lots of honey? Drizzle until your heart’s desire! Want ice cream instead of whipped cream, go for it!
Also, if you like another fruit more than strawberries, swap it. This dessert is very versatile and will keep everyone happy this summer!

Mini Dairy and Gluten Free Strawberry Pie
Ingredients
- Gluten free graham crackers (I used Simple Mills)
- Diced strawberries
- Drizzle if honey (measure with your heart)
- Sprinkle of cinnamon
- Topping of your choice (I used coconut whipped cream)
Instructions
- Preheat the oven to 350 degrees.
- Use cooking spray in a few mini pie dishes or ramekins. Then add your crushed graham crackers at the bottom.
- Now add your diced strawberries. Drizzle honey over to top. Sprinkle some cinnamon. Bake for 15-20 or until strawberries are bubbling.
- Let cool for about 5 minutes and then add your topping of choice!
