Greek Chicken Flatbread with Dairy Free Tzatziki Sauce

This meal was inspired by the dozens of cucumbers that come from our summer garden, on the daily! Tzatziki sauce popped in my mind and I thought hmm, how could I make this sauce dairy free?
A pretty simple swap was made! Instead of Greek yogurt, I used some plain coconut milk yogurt. “Culina” is my favorite brand of dairy free yogurt. It just so happens that it’s made from coconut and only has a few ingredients.
This Tzatziki sauce is great for salads too! So if you have leftovers after these flatbreads, just throw together a Greek inspired salad. You could even use it as a dip for a veggie tray! This quick and easy weeknight dinner is one your entire family can get in on. I love meals that can be served buffet style! Just line it all up and let each family member add on what they like. You could get even more creative and bring out the olives and/or roasted red peppers.

Greek Chicken Flatbread with Dairy Free Tzatziki Sauce
Ingredients
- 6 Individual Flatbreads or Pitas
- Shredded Bibb Lettuce
- Sliced Cucumbers
- Dairy Free Feta Cheese (I use the brand Follow Your Heart)
- Sliced Tomatoes (optional)
- 4 Chicken breasts
- Juice from 1 lemon
- 1 teaspoon lemon zest
- 1 tablespoon minced garlic
- 2 teaspoons dried oregano
- Sprinkle of sea salt and pepper
- ½ Cucumber, peeled and seeded
- 1 cup plain coconut yogurt
- 2 tablespoon dried dill
- 1 small garlic clove, minced
- 2 Tablespoons extra virgin olive oil
- 2 Tablespoons lemon juice
- Sea salt to taste
- Fresh ground black pepper to taste
Instructions
- Preheat oven to 350°F (grilling & air fryer is also an option)
- Squeeze lemon juice over chicken breasts. Top with minced garlic, dried oregano and lemon zest. Bake chicken for 30 minutes or until chicken is cooked through. (Time for grilling & air frying could be different.)
- When chicken is finished cooking, set aside for 5 minutes before slicing. This helps keep the chicken from drying out.
- While the chicken is cooking, it's a good time to prepare the Tzatziki sauce.
- Peel the cucumber and scoop out the seeds. Grate the cucumber and squeeze out any excess liquid. In a medium bowl, mix together the coconut yogurt, dried dill, minced garlic and lemon juice. Add the grated cucumbers and stir to combine. Season to taste with sea salt and fresh ground pepper.
- Drizzle the olive oil over the yogurt mixture to add more richness and flavor. Stir well. Cover and chill for at least 15 minutes or overnight if you are making ahead of time.
- You can heat up the flatbread or pita if desired. Either under the broiler for a few minutes. On the grill or in the air fryer.
- Then begin to layer the shredded Bibb lettuce, sliced chicken breasts and dairy free Tzatziki sauce. You can also top with fresh tomato slices and dairy free feta cheese (I use the brand Follow Your Heart).
- Perfect for an easy weeknight dinner!
