  • Milk: Use dairy free milk. I prefer to use oat milk for this recipe.

  • Yeast: You will need one package of fast rise yeast. I like to use the Kroger brand.

  • Flour: Use gluten-free 1:1 baking flour.

  • Sugar

  • Salt & black pepper: You will use sea salt in the dough and flaky salt sprinkled on top before baking.

  • Olive oil

  • Italian seasoning

Step-By-Step Instructions

Here is how to make this easy recipe.

Step 1: Line a baking sheet with a lip with parchment paper and coat with olive oil.

Step 2: In a microwave safe measuring cup, combine the water and dairy free milk. Heat in the microwave for one minute, or until lukewarm and reaches a temperature of 110°F.

Step 3: Sprinkle the yeast over the water mixture and stir with a fork. Allow it to sit for 5 minutes.

Step 4: Meanwhile, in the bowl of a stand mixer fitted with a paddle attachment, combine the flour, sugar and sea salt. Mix on low speed until combined.  

Step 5: Add the yeast mixture and 3 tablespoons of olive oil to the flour mixture. Mix on low for 1 minute and then increase the speed to medium-high for 6 minutes. The dough will be thick but pourable. 

Step 6: Transfer the dough to the prepared baking sheet and spread with a silicone spatula.  

Step 7: Drizzle the top of the dough with olive oil and spread it around with your fingers. Sprinkle it with flaky salt and Italian seasoning. Cover, set aside and allow the dough to rise for 30 minutes. 

Step 8: Preheat the oven to 350°F.

Step 9: After rising, gently make indentations with your fingertips across the focaccia.
Step 10: Bake for 30-35 minutes or until the top is golden brown. Cool in the pan for 10 minutes and lift out of the pan using the parchment paper. Slice and serve!

  • Be sure the water and milk mixture is warm but not hotter than 110°F. If the mixture is too hot, it will kill the yeast when you add it and your bread will not rise at all.

Easy Gluten Free Focaccia

Ingredients

  • ¾ cup water⁣
  • ¾ cup dairy free milk⁣ (I prefer oat milk)
  • 1 package Fast Rise Yeast (I use the Kroger brand)
  • 2 ½ cups (or 300 grams) 1:1 Gluten-Free Baking Flour
  • 1 Tablespoon granulated sugar⁣
  • 1 teaspoon sea salt
  • 5-6 tablespoons olive oil, divided⁣
  • 1 Tablespoon Italian seasoning
  • flaky salt & pepper, to taste

Instructions

  1. Combine the water and dairy free milk in a microwave safe measuring cup. Heat for 1 minute, or until lukewarm and reaches the temperature of 110ºF.
  2. Sprinkle with yeast and stir with a fork. Let sit for 5 minutes.
  3. While waiting for the yeast liquid, use a stand mixer and paddle attachment. Combine the gf flour, sugar, and sea salt on low speed until combined. Then add yeast mixture and 3 tablespoons of olive oil.
  4. Mix on low speed for 1 minute to combine. Increase speed to medium high and beat for 6 minutes. Batter will be thick, yet pourable.
  5. Using a baking sheet with a lip, line it with parchment paper and coat it with some olive oil.
  6. Spread the focaccia batter onto the prepared sheet pan and smooth evenly with a silicone spatula.
  7. Drizzle with more olive oil on the top and smooth with fingers. Sprinkle it with flaky sea salt and Italian seasoning . Set aside, covered for 30 minutes.
  8. Preheat the oven to 350ºF.
  9. When done rising, gently make indentations with your fingertips, across the focaccia.
  10. Bake for 30-35 minutes or until the top is golden brown.
  11. Cool in pan for 10 minutes, then lift by parchment paper. Slice and serve while warm for the most delicious flavor!
