This salad just screams summer, doesn’t it? All the fruit mixed with the crunchy greens, it’s simply bursting with flavor! The dressing is also dairy free and can be used for many salads, not only this one.

Although I made balsamic chicken breasts for mine, you could totally use a store bought rotisserie chicken.

This salad is simple and can be thrown together in just minutes!

Ingredients

Salad Ingredients
  • chopped romaine lettuce
  • diced pineapple
  • sliced strawberries
  • clementine segments
  • blueberries
  • chopped pecans
  • balsamic chicken breasts or shredded rotisserie chicken
Dairy Free Poppyseed Dressing Ingredients
  • 2/3 cup avocado oil
  • 1/3 cup apple cider vinegar
  • 2 tablespoon lemon juice
  • 2 1/2 tablespoons maple syrup
  • 1/2 teaspoon dijon mustard
  • 2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 3 teaspoons poppy seeds

Instructions

  1. Combine all salad ingredients together, cover and keep chilled. Mix all dressing ingredients in a jar with a tightly screwed lid & shake well.
  2. Keep the dressing stored in the refrigerator. Don’t mix dressing and salad together until ready to serve, as the lettuce will get wilty.
