These cozy, scrumptious and  healthier apple pie bars are going to be your favorite fall dessert! They are dairy free, gluten free and vegan. The oat crust gives them an incredible texture, while the green apples a sweet and tangy bite!

If you love the taste of apple pie but aren’t a fan of making the crust, might I suggest these apple pie bars? They still give off that warm and cozy vibe , yet simple to make! The first layer is the oat cookie-like base. Then thinly sliced stove cooked apples. Finishing it off with an ooey gooey marshmallow and caramel topping. (The marshmallows are totally optional but highly recommended!)

A few things about this recipe you should know ahead of time. First, let the bars completely cool before drizzling the dairy free caramel sauce over them. Why? Well cutting into the bars while warm is just going to make a mess! So after topping with the dairy free marshmallows and baking for a quick 5 minutes, let them cool on a wire rack for about an hour or so.

Then drizzle this simple homemade dairy free and vegan caramel sauce over the top. 

Now feel free to cut into 9 pieces or if you would like more, cut the bars a little smaller. You can definitely eat them immediately but I actually stumbled upon an even better way to enjoy them…COLD! Yes I know, kinda defeats the purpose of a warm and cozy dessert right? But trust me! See, I packed up the leftovers and stored them in the refrigerator the night I baked them. The following evening, I remembered these decadent little treats and ate one right from the fridge. Wow, it was amazing!

Caramel Apple Pie Bars

Ingredients

For the Crust
  • 1 ½ cups gluten free oat flour⁣
  • 1 cup gluten free old-fashioned rolled oats⁣
  • ½ cup coconut sugar⁣
  • ½ teaspoon ground cinnamon⁣
  • ¼ teaspoon baking soda⁣
  • ¼ teaspoon sea salt⁣
  • 8 tablespoons dairy free butter, melted (I use Miyoko’s Creamery)⁣
  • 1 teaspoon vanilla extract⁣
For the Filling
  • ½ tablespoon dairy free butter, melted⁣
  • 4 medium green apples, peeled and cut into 1/4th inch slices⁣
  • 3 Tablespoons pure maple syrup⁣
  • 2 teaspoons arrowroot powder⁣
  • ½ teaspoon cinnamon⁣
  • Pinch of allspice⁣
  • Pinch of nutmeg⁣
  • 1 teaspoon vanilla extract⁣
  • Pinch of sea salt⁣

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper, set aside.⁣
  2. In a large bowl, use a fork to mix together the oat flour, oats, coconut sugar, cinnamon, baking soda and salt. Add in dairy free melted butter and vanilla extract stir until a nice crumble forms and dough begins to clump together.⁣
  3. Press the mixture into the prepared baking pan. Use your a silicone spatula to evenly press the dough to the bottom of the pan.⁣
  4. 𝘛𝘰 𝘮𝘢𝘬𝘦 𝘵𝘩𝘦 𝘢𝘱𝘱𝘭𝘦 𝘱𝘪𝘦 𝘧𝘪𝘭𝘭𝘪𝘯𝘨- Melt dairy free butter in a large skillet over medium heat. Add the sliced apples to the pan and stir to coat the apples. Add in maple syrup, cinnamon, allspice, nutmeg over the apples and stir well. Lower heat to medium low and cook for about 5-7 minutes or until apples begin to soften nicely. ⁣
  5. Next stir in the vanilla extract and arrowroot powder. Continue cooking over low heat for 3-5 minutes so the sauce thickens. Remove from heat.⁣
  6. Pour apple mixture over the oat crust and use a spoon to spread evenly. Bake for 30 minutes or until the topping is nice and golden.⁣
  7. Then sprinkle dairy free marshmallows on top and bake for 5 minutes more. Or until marshmallows are slightly browned and melty.
  8. Allow bars to cool completely in the pan on a wire rack. Then drizzle with dairy free caramel sauce. Slice, serve and enjoy!
