Besides smoothies, I haven’t found a ton of recipes that pack a protein punch, without eggs! I used to have eggs for breakfast, pretty much every morning, just a couple of years ago. 

That was until I was diagnosed with Hashimoto’s thyroid disease. My functional medicine doctor recommended that I abstain from eggs. So, that led me to get more creative in the kitchen. Guess it wasn’t all bad…I mean, it gave me a reason to start this recipe blog!  Hopefully helping  other people with food sensitivities find alternative recipes too.

Which is the perfect segway into this Sweet Potato Breakfast Hash. It’s loaded with great complex carbohydrates, clean protein and even veggies. This dish is not only simple to make but you really can swap out any of the ingredients and use what you have on hand. Maybe you have regular potatoes at home right now? Or zucchini growing fresh in your garden? Don’t have breakfast sausage? That’s ok, you can use bacon instead! The point is to make it simple and if possible just use one pan to get it done.

A little side note about breakfast sausage. Typically it’s filled with nitrates, fillers and not the best quality of protein. Egg Free Sweet Potato Breakfast Hash.

This breakfast can definitely be made ahead of time for meal prep or even on a weekend during a slow morning.

If you do have people at your table who prefer an egg or two, no problem! Take out a portion of hash for yourself, then crack a couple eggs on top of the rest. Cover the pan for a few minutes while those eggs cook to an over easy or over medium and voila, now you can serve everyone!

Sweet Potato Breakfast Hash (egg free)

Ingredients

  • 1 package (𝟷𝟸 𝘰𝘻) Bilinski’s Organic Apple⁣ Breakfast Chicken Sausage, sliced⁣
  • 4 cups diced sweet potato (1 large sweet potato or 2 medium sweet potatoes)⁣
  • 1 tub pre-washed (𝟷𝟶 𝘰𝘻.) fresh baby spinach⁣
  • 1 clove garlic, minced⁣
  • 2 Tablespoons avocado oil⁣
  • 2 teaspoons dried basil⁣
  • 2 teaspoons dried oregano or thyme⁣
  • 1 teaspoon sea salt⁣
  • 1/2 teaspoon pepper⁣
  • Garnish options, green onions, avocado, fresh thyme, parsley or eggs⁣

Instructions

  1. Add avocado oil to a large skillet, over medium heat. When oil is hot, add the diced sweet potatoes and cook for 5 minutes.⁣
  2. ⁣After 5 minutes, add in minced garlic, sea salt and seasonings. Cook for an additional 10-15 minutes or until sweet potatoes are soft.⁣
  3. ⁣Next add the sliced sausages. Cook until sausage is heated through. Toss in fresh spinach. Cooking a few minutes more until spinach wilts down. (You want the spinach to still be bright green in color,)⁣
  4. ⁣Top with any optional garnishes and enjoy this simple one pan breakfast!
