The great thing about chia pudding is you can enjoy it for dessert or breakfast! It’s sweet enough to trick your brain into thinking it’s a treat. But nutritious enough to fuel your body for the busy day ahead!

Yes, of course, it’s dairy & gluten free but no one will know. So make extra to share!

If you don’t care for strawberries you can make the syrup with any fruit. Simply just swap in what you do like & follow the same recipe below. (You only need to strain the fruit after cooking, if it contains seeds.)

Strawberry & Cream Chia Pudding

Ingredients

Chia Pudding
  • 1/2 cup chia seeds⁣
  • 1 can full fat coconut milk (from a can)⁣
  • 1 cup non-dairy milk (any you desire)⁣
  • 2 teaspoons vanilla extract⁣
  • 2 tablespoons honey or maple syrup or to taste⁣
Strawberry Syrup
  • 2 cups fresh or frozen strawberries⁣
  • 2-4 tablespoons maple syrup⁣
  • 2 tablespoons lemon juice⁣

Instructions

Chia Pudding
  1. Add 1 can of full fat coconut milk, 1 cup dairy free (plant milk), vanilla and sweetener to a blender.⁣
  2. ⁣Add in the chia seeds and pulse 2-3 times in the blender to combine. Let it sit for a minute then pulse again. You just want to combine the ingredients, you don't want to fully blend the chia seeds. ⁣
  3. ⁣Pulse again a few more times. (This will help prevent any clumps of chia seeds from forming and will help the pudding thicken faster than simply mixing everything together in a jar.)⁣
  4. ⁣Transfer mixture to a large bowl. Let thicken in the refrigerator for at least 1 hour. (You can also prepare the night before and let it thicken overnight.)⁣
Strawberry Syrup
  1. Cook strawberries, maple syrup & lemon juice on the stovetop with medium heat. You’ll want to cover them but stir every few minutes until mashable with a spatula (an apron might be in order!)⁣
  2. Once strawberries are mushy & resemble thick jam, turn off the stove. Strain strawberry mixture 1/4 cup at a time through a sieve. You only want the liquid, not the pulp.⁣
  3. You can drizzle your strawberry syrup over your chia pudding, oatmeal or your favorite dairy free ice cream!
