Step 1: In a large mixing bowl, use a fork to mash the sweet potatoes until they are smooth and creamy and there are no longer any lumps.

Step 2: Add the salt and 2 tablespoons of the flour.  Knead the dough until it is no longer sticky, adding more flour as needed.

Step 3: Roll the dough into several ropes.  Using a sharp knife or bench scraper, cut the ropes into 1-inch pieces.

Step 4: Place gnocchi in a single layer in your air fryer basket.  Spray with avocado oil and air fry at 350°F for 5-7 minutes.

Step 5:  Flip the gnocchi and continue to cook for 2-3 additional minutes.

  • Cook your sweet potatoes in advance. This allows them time to cool, making it easier for you to handle the dough.

  • Be sure to mash the sweet potatoes well enough that there are no lumps. The lumps will not allow the dough to come together.
