- 1 3/4 cup cooked purple sweet potato
- 2-4 Tablespoons of gluten free flour (I used cassava flour)
- 1 tsp salt
Instructions
- In a large mixing bowl, use a fork to mash the purple sweet potato until smooth and creamy. It’s important that there are no clumps left or the gnocchi won’t stay together.
- Add in salt and 2 tbsp of flour. Knead the dough until no longer sticky, adding more flour as needed.
- The dough will need more or less flour depending on the potato’s moisture, but try to add as little as possible for light and fluffy gnocchi.
- Roll the dough into several ropes and use a sharp knife or scraper to cut into 1 inch pieces.
- I cooked mine in the air fryer on 350 F. Spray all the gnocchi with avocado oil. Then air fry them for 5-7 minutes. Flip them, spray the other side and cook for an additional 2-3 minutes. You can fry these on the stove or bake them in the oven as well.
