Greek Chicken Flatbread with Dairy Free Tzatziki Sauce

This meal was inspired by the dozens of cucumbers that come from our summer garden, on the daily! Tzatziki sauce popped in my mind and I thought hmm, how could I make this sauce dairy free?

A pretty simple swap was made! Instead of Greek yogurt, I used some plain coconut milk yogurt. “Culina” is my favorite brand of dairy free yogurt. It just so happens that it’s made from coconut and only has a few ingredients.

This Tzatziki sauce is great for salads too! So if you have leftovers after these flatbreads, just throw together a Greek inspired salad. You could even use it as a dip for a veggie tray! Now that I’m thinking about it, so many recipes are coming to mind! Like lamb meatballs with rice and a drizzle of this dairy free Tzatziki…

This quick and easy weeknight dinner is one your entire family can get in on. I love meals that can be served buffet style! Just line it all up and let each family member add on what they like. You could get even more creative and bring out the olives and/or roasted red peppers.

Served as dinner or even a weekend lunch, you’ll be enjoying the last days of summer with a full belly!
