Gluten Free Nut Free Chocolate Chip Energy Bites

The first day of school commenced with a snack my kids love! The delicious energy bite. It doesn’t matter how I make them, they are inhaled in about 2 days!
Of course the kiddos like chocolate chip anything and really, who could blame them?
So I made a batch of these nut free and gluten free yummy energy bites to pack in my son's lunch box. My daughter homeschools (she’s a senior this year) so she enjoys snacking on these in between online classes. While hubby and I try to maintain our willpower by only eating two a day…But it’s a struggle because they’re sooooo good!
These will totally satisfy anyone with a sweet tooth, especially in that weird time between dinner and bedtime. But don’t let that sweetness fool you, energy bites are definitely a healthy snack option! They are packed with healthy fats, like the sunflower butter, chia seeds, hemp hearts and pepitas. Oh and we can’t forget the complex carbohydrates we get from the gluten free, sprouted oats either. Which is why these are also great as a post workout snack too!
If you don’t need to be nut free, you can swap out the sunflower butter for peanut, almond or cashew butter. They all work beautifully!

Gluten Free Nut Free Chocolate Chip Energy Bites
Ingredients
- 2 cups gluten free sprouted oats, ground
- 1/4 cup pepitas (or Mexican pumpkin seeds)
- 1 Tablespoon hulled hemp hearts
- 1 Tablespoon chia seeds
- 1/2 cup mini chocolate chips
- 1/4 teaspoon sea salt
- 1/2 cup sunflower butter
- 1/2 cup honey
- 1 tsp vanilla
Instructions
- Using a food processor, or high powered blender, blend oats until crumbly. (I like my energy bites with a smaller oatmeal consistency!)
- Once oats are processed to your preference, add in all other ingredients. Start by pulsing 5-10 times. Then blend until the dough comes together and is a workable consistency.
- Shape into small balls, you’ll get around 22 if you don’t eat any first! Store in an airtight container and chill for 30 minutes. These will stay fresh inside the refrigerator for 5-7 days.
