  • Cinnamon

  • Nutmeg

Step-By-Step Instructions

Here is how to make this gluten free banana bread recipe.

Step 1: Preheat the oven to 350°F.  Spray a loaf pan with cooking spray.

Step 2: In a medium bowl, whisk together the dry ingredients:  flour, cinnamon, nutmeg, baking powder, and baking soda.  Set aside.

Step 3: In a large mixing bowl, combine the wet ingredients:  mashed banana, sugar, coconut sugar, milk, butter, and vanilla.  Whisk together.

Step 4: Fold the flour mixture into the banana mixture using a rubber spatula just until combined.  If using, fold in the chocolate chips and/or pecans at this point.

Step 5: Pour the banana bread batter into the prepared loaf pan.  Bake in the preheated oven for 65-70 minutes or until a toothpick comes out clean.

Step 6: Remove the bread from the oven and allow it to cool for 10 minutes in the pan before transferring to a cooling rack to cool completely.

Step 7: Slice and serve the bread warm.  Store leftovers in an airtight container in the refrigerator for up to 5 days.

Expert Tips

  • Be sure to mix the flour and banana mixture just until combined. You want to be careful that you are not overmixing.

  • To ensure the bread cooks evenly, I like to cover the loaf with aluminum foil and cut a slit in the middle at about 50 minutes into the cooking time.

  • Mash the banana with a fork right in the mixing bowl you plan to use to combine the rest of the ingredients.

Variations

  • Top the batter with extra banana for a fancy top to your loaf!

  • Add one cup of chocolate chips, chopped pecans, or a combination of the two to the batter before baking for an extra special treat.

Serving Suggestions

Serve this moist banana bread warm from the oven for the most delicious flavor. You can also serve this toasted, spread with your favorite nut butter, butter,  cream cheese. This makes a great snack, breakfast or dessert!

Frequently Asked Questions

Can I use regular all-purpose flour instead of gluten free flour?

While the recipe is specifically designed for gluten-free flour, you can try substituting with regular all-purpose flour. However, keep in mind that the texture and results may differ.

How ripe should the bananas be?

You will find that spotty bananas that have peels  with a lot of brown spots or that are mostly brown are going to be the sweetest.  These provide the best flavor for banana bread.

Can I freeze the banana bread?

Yes.  This banana bread freezes quite nicely.  Wrap in plastic wrap or aluminum foil and store in an airtight zip top bag for up to three months in the freezer.
