Step-By-Step Instructions

Here is how to make this easy recipe.

Step 1: Line a baking sheet with a lip with parchment paper and coat with olive oil.

Step 2: In a microwave safe measuring cup, combine the water and dairy free milk. Heat in the microwave for one minute, or until lukewarm and reaches a temperature of 110°F.

Step 3: Sprinkle the yeast over the water mixture and stir with a fork. Allow it to sit for 5 minutes.

Step 4: Meanwhile, in the bowl of a stand mixer fitted with a paddle attachment, combine the flour, sugar and sea salt. Mix on low speed until combined.

Step 5: Add the yeast mixture and 3 tablespoons of olive oil to the flour mixture. Mix on low for 1 minute and then increase the speed to medium-high for 6 minutes. The dough will be thick but pourable.

Step 6: Transfer the dough to the prepared baking sheet and spread with a silicone spatula.

Step 7: Drizzle the top of the dough with olive oil and spread it around with your fingers. Sprinkle it with flaky salt and Italian seasoning. Cover, set aside and allow the dough to rise for 30 minutes.

Step 8: Preheat the oven to 350°F.

Step 9: After rising, gently make indentations with your fingertips across the focaccia.
Step 10: Bake for 30-35 minutes or until the top is golden brown. Cool in the pan for 10 minutes and lift out of the pan using the parchment paper. Slice and serve!

Expert Tips

  • Be sure the water and milk mixture is warm but not hotter than 110°F. If the mixture is too hot, it will kill the yeast when you add it and your bread will not rise at all.

Variations

  • Try adding some additional toppings to the dough once it has been spread in the pan. Some great choices would be topping it with fresh herbs, garlic cloves, olives, onions, grated cheese, or cherry tomatoes.

Serving Suggestions

Serve this warm from the oven for the most delicious flavor. You can serve this as a side to soups, a salad or your favorite pasta dish.

Frequently Asked Questions

Can I use regular all-purpose flour instead of gluten free flour?

This recipe is specifically designed for gluten-free flour and I haven’t tried it with regular all-purpose flour.

Can I make the dough in advance and bake it later?

It's best to bake the focaccia right after preparing the dough for optimal results. The dough may not rise as well if left for an extended period before baking.

What can I do with leftovers?

Store any leftovers in an airtight container or resealable bag to keep the focaccia fresh. It's best to consume gluten-free bread within a day or two for the best taste and texture.
