- Grain free tortilla chips (I use Siete Foods )
- Dairy free shredded cheese ( Violife melts great)
- Cooked shredded chicken
- Shredded zucchini
- Black beans
- Sliced black olives
- Cilantro Lime Crema
Instructions
- Preheat the oven to 350 F. Arrange 1.5 bags of grain free tortilla chips on a parchment paper lined sheet pan.
- Sprinkle the dairy free cheese all over the chips. Then add the shredded chicken (I like to cook chicken breast with my favorite taco seasoning, then shred it when it’s cool in a food processor). Add the shredded zucchini, more cheese (if desired), black beans & sliced black olives.
- Bake for 15 minutes (checking once to make sure the chips don’t burn). Remove from the oven and let the nachos cool for about 5 minutes. Top with the Cilantro Lime Crema or dairy free sour cream.
