When my kids were little I would make homemade ice cream about once a week. I had a fancy ice cream machine and it was fun trying new flavors! But as the kids got older and mom duties increased, ice cream making wasn’t at the top of my list, go figure…

But then again life changed and two of our daughters decided to eat vegan. I found myself wanting to try dairy free ice cream making, since many store bought versions are loaded with many many ingredients!

Finding a good base recipe is the first step. After finding a base recipe you like, the combinations are endless! You could do fruity. Salty. Sweet…Fruity, salty and sweet, they are all fabulous!

For summer, I like using some type of berry. Blackberries, strawberries or blueberries along with a cookie or brownie. It totally feels more healthy when you add fruit, lol!

But seriously, this combo of blackberries and chocolate is my favorite! If you don’t want to use brownies, try mini chocolate chips. You could even add in some sort of nut, like walnuts or sliced almonds. Endless possibilities right here!

The one tip I would like to highlight is the preparation of  your mixing bowl and cans of coconut milk. It really does make it easier to whip the coconut cream when you prep them in the refrigerator for one hour beforehand.

You could even throw your whipping beaters in the fridge too! The colder those things are the easier it will be to whip that coconut cream into fluffy peaks.

Now with myself being dairy free and gluten free, I’m thankful for my girls teaching me about all the alternatives available out there. I even found gluten free ice cream cones. You gotta try them, you’ll feel like a kid yourself again!

Dairy Free Blackberry Ice Cream with Brownies

Ingredients

  • 2 cans of full fat coconut milk⁣
  • 4 oz dairy free sweetened condensed milk⁣
  • 1/4 tsp sea salt⁣
  • 1/4 cup maple syrup⁣
  • 1 pint fresh blackberries⁣
  • 1 tsp vanilla⁣
  • 1 batch of brownies (box mix or homemade)⁣

Instructions

Brownies
  1. Make brownies ahead of time. (When cool, break brownies into small pieces. You’ll want to freeze them before mixing into the final ice cream mixture.)⁣
Ice Cream
  1. Before beginning, place the two cans of full fat coconut milk in the refrigerator for 1 hour. This will help the cream at the top of the can to harden as much as possible.⁣
  2. Another step that will also help in making a successful ice cream base, is placing your mixing bowl in the refrigerator for the same amount of time.⁣
  3. When it’s time to begin the ice cream recipe, remove both the cold mixing bowl and two cans of coconut milk from the refrigerator. Don’t tip or shake the cans of coconut milk so as not to disturb the hardened coconut cream. Gently open each can and scoop out the layer of coconut cream off the top. Place cream into the cold mixing bowl. Store and save the remainder of unused coconut milk for another recipe .⁣
  4. Using the highest setting on either a stand or handheld mixer, start whipping the coconut cream until stiff peaks form. This could take anywhere from 5-10 minutes.⁣
  5. Slowly mix in the dairy free sweetened condensed milk, maple syrup and sea salt. (You can find coconut or oat sweetened condensed milk at your local natural foods grocery store.)⁣
  6. Mash your blackberries with a fork. Start folding them, along with your frozen brownie pieces, into the coconut ice cream mixture.⁣
  7. Finally, layer the ice cream into a freezer safe container. Make sure the ice cream is completely covered and freeze for at least 6 hours-overnight.⁣
  8. When ready to serve, let ice cream thaw a few minutes before scooping. Enjoy your delicious dairy free ice cream in a cone or bowl!
