  • Strawberries: Use one pound of fresh strawberries.

  • Honey

  • Salt

  • Chia seeds: Chia seeds help to give the mashed strawberries a jam-like consistency.

Step-By-Step Instructions

Here is how to make this delicious jam.

Step 1: Place strawberries, honey and a pinch of sea salt in a medium saucepan.

Step 2: Cook over medium-high heat, stirring occasionally, until strawberries are softened.

Step 3: Using a fork or immersion blender mash the strawberries until you have reached the desired consistency.

Step 4: Remove the strawberry mixture from the heat and allow it to cool for 10-15 minutes.

Step 5:  Add the chia seeds to the strawberry mixture and stir well to combine.

Step 6: Allow the mixture to completely cool, about 1 hour.

Step 7: Store in an airtight container in the refrigerator.

Expert Tip

  • Slice your strawberries before adding them to the saucepan.  This allows them to cook quicker and makes it easier for you to mash them with a fork when they are softened.

  • Allow some chunks to remain when mashing the strawberries with a fork.

  • Store in mason jars with tight fitting lids in the refrigerator for maximum freshness!

  • Use a potato masher to mash the strawberries once they are softened.

Variations

  • Use maple syrup in place of the honey.

  • Add a squeeze of lemon juice to give the jam a bit of tartness.
