During the month of July, my social media was flooded with posts and videos of the “Hailey Bieber Strawberry Glaze Skin Smoothie”. I knew this trending smoothie could be made at home while still tasting as yummy as the original! So I tweaked the recipe a bit and decided to call it the “Strawberry Glow Up Smoothie”.

Well guess what? It doesn’t disappoint!

Strawberries are plentiful this time of year, making it easy to stock up. So buy more than you need and save the extras for the freezer.

The smoothie itself is easy to make. It’s the assembly that takes a few extra minutes but is totally worth it!

When buying your coconut milk, make sure it’s the canned version. Not the carton! Also, reach for the “full fat” coconut milk and not the lite (don’t shake the can either). You’ll want to be able to scoop the cream off the top.  I like pouring the remaining coconut liquid into ice cube trays and freezing them for future smoothies!

Now let’s start making the glass pretty. Take the coconut cream, a spoonful at a time and make four swipes upward around the glass. Then take the mashed strawberries and swirl them around the inside of the glass too.

Gather the remaining smoothie ingredients, blending until nice and creamy.  Oh and if you’re worried about tasting the cauliflower, you won’t! Just smile knowing that you’re adding an extra veggie into your day.

Frozen strawberries are making this smoothie perfectly sweet without added sugars. The avocado, well that’s providing a healthy fat. While the collagen is helping your hair, nails, skin and joints.

The Superfoods will add great phytonutrients, antioxidants, enzymes, prebiotics, probiotics, fiber, adaptogens, vitamins, and minerals.

Lastly, unsweetened coconut water is going to up the hydration factor. Which during these summer months, is super important!

Many Hugs,

Cathleen
